The fact that I am weird, you allknow already. People around are baking cakes, celebrate chocolate or pancake days, and I eat carrots. In salads, cheesecakes, breads. Seems like my favorite vegetable is the carrot.
But it’s not, I’m not a big fan of carrots. Oh, I like them, but I’m not crazy about them. And even in my childhood, my mother told me that carrots are good for the eyes. So, I ate the carrots, because I have the poor sight and I never liked wearing glasses (other kids bullied me about glasses). And? And nothing. I ate so many carrots that I should have eagle eyes and I still, without glasses, have sight of bat.
Of course, it is also possible that without all these carrots I would be completely blind…
It is true that lutein (one of the carotenoids contained in carrots) is stored in the retina and lens of the eye. Accordingly, high levels of lutein allows you to delay or even avoid cataracts and other eye diseases associated with aging.
Regardless of lutein, carrot is simply good. Fresh is delicious, boiled, baked, fried. Sweet, spicy.
So today, very simple raw carrot salad. I used black and purple carrots, but with the usual orange will be equally good.

Ingredients:
4 – 5 carrots
green onion
roasted sunflower seeds
marinade:
1 tablespoon lemon juice
2 tablespoons orange juice
0.5 teaspoon dried mint (ground to a powder)
dressing:
1 tablespoon cumin
0.5 teaspoon anise seeds
0.5 tsp coriander seeds
pinch of cinnamon
approx. 0.25 teaspoon smoked hot peppers
1 tablespoon lemon juice
1 teaspoon maple syrup (agave or honey. If we use honey salad is not vegan)
3 tablespoons of avocado oil (pumpkin seeds or good olive oil)
Preparation:
- Peel the carrots, then use a vegetable peeler to cut the ribbon.
- Mix marinade ingredients together, add the carrots. Mix thoroughly and leave for min. 1 hour.
- Cumin, anise and coriander seeds roast for a few minutes, until fragrant. Leave to cool and then grind.
- Dressing ingredients mix thoroughly (you can add the rest of the marinade) and add the carrots. Mix again, so that the dressing cover carrots. Add the green onions and roasted sunflower seeds.
