Pre-Christmas time is a not only time of hectic shopping, preparations and plans, but also a period of fasting.
In my home that meant Friday’s dinners of potatoes in their skins with pickled herring. Potatoes topped with butter and herring in thick cream blanket. No one really expected that, rather than mortify ourselves, we would eagerly wait for these meatless dinners.
These days I changed these meals slightly. Herring is still marinated in vinegar, but thick yogurt replaced sour cream and instead of the usual potato – salad.
Potatoes are very poor, if we speak about the nutrients. 18 % carbohydrates – mainly starch, 2 % protein , 1.5% minerals – potassium, calcium, phosphorus, iron. If we can choose , we try to pick potatoes with yellow flesh – they have a higher content of carotenoids.
Only edible part of potato are tubers, all ground parts contains solanine, which is not only poisonous, but also has a carcinogenic effect. Also remember that most of the nutrients is right under the skin, which is why we eat potatoes with the skin (if it is nice and in the case of young potatoes) or peel very thinly .
Today, however, in a salad, a third option – the potatoes in their skins .
10 – 12 small potatoes
green onions or chives
freshly ground pepper
- Wash potatoes, puncture them with a fork in two or three places, put into the pot and cook until soft.
- Boil eggs mild. Peel.
- Cooked potatoes peel and divide into parts. Put into a bowl. Add eggs divided into quarters.
- Sprinkle with walnut oil (you can use butter instead of walnut oil), season with sea salt and freshly ground pepper.
- Finally add green onion.
Salad excels both as a separate dish, and as an addition to fasting herring or smoked salmon.
